2日、朝の情報番組『あさイチ』（NHK）で、「どんどん進化中！食材の“シン・常識”」という特集を放送。トランス脂肪酸が大幅に減少して体に良くなったマーガリンの新常識などを紹介。
この日のゲストは、紗理奈さんとチュートリアルの福田充徳さん。紗理奈さんはマーガリンについては「お手頃だけど体にあまりよくはない」という常識をアップデートしていなかったもよう。
紗理奈さんは「マーガリンは体に悪いというイメージですし……」とコメントし、福田さんも「マーガリンよりもバターのほうが体にいいというか自然なのかなぁと思って思ってなんですけど、そんなに変わっているんですか？」と驚いた表情。じつは2014年以降はトランス脂肪酸が9分の1になっており、パッケージにも明記されています。紗理奈さんは「知らんいつの間にですか？」「全然そんな情報届いてないです、もうちょっと早く」とのべており、博多華丸さんに「聞く耳もたないところがあったと思いますよ」と突っ込まれていました。
番組によると、バターは牛乳に含まれる脂肪分を分離させて固めた製法で作られます。マーガリンは植物性の油脂のため固まりにくく、昔は水素を加えた油脂を入れて固めていました。しかし、水素を加えた油脂を使わずに固まる技術が開発され、そのため今のマーガリンはトランス脂肪酸が低くなったそうです。
紗理奈さんは「この10数年低くなってたってことですね。私この10数年マーガリンを辞めていました」と残念な告白も。ちなみにトランス脂肪酸は牛乳・バター・牛肉などの食品にも含まれており、WHOの基準によると「総エネルギー摂取量の1％未満、1日2g程度」は問題ないとされています。トースト1枚にマーガリンをたっぷり塗ってもトランス脂肪酸は0.1gなので、怖がりすぎる必要はないようです。
じつはスーパーで売られているマーガリンの多くは、ファットスプレッドとされるもの。天然のバターと比べてカロリーやコレステロールを減らしており加工しやすく、冷蔵庫で冷やしても柔らかい特徴があります。
目から鱗の新事実に紗理奈さんは「バターがあかんわ」と混乱しており、博多大吉さんは「落ち着いてください。マーガリンをすすめるとバターが悪者になるっていうのは不毛ですから」と説明。バターにも「コクとうまみが強い。加熱すると風味アップ。ビタミンAが豊富」などの長所があり、大吉さんも「バターにはバターの良さがあるから」とフォローしていました。
